What is your favorite motherhood moment?
A favorite motherhood moment is a time when one of my kids act upon the things we teach them, like kindness to others, being helpful without complaining or showing respect and obedience when peers are getting out of hand (usually at school). Those are proud moments and I can feel like something is sinking in.
What is your favorite time spent with your kids?
A favorite time with the kids is when music is on and everyone is singing along, sometimes at the top of our lungs...not that we are any good at singing but I still love it, maybe because everyone is getting along and happy at those times.
What is your least favorite chore?
My least favorite chore is food. I used to love to cook but right now I don't. I don’t know if it is because I don’t have time with all the running around and getting kids to various activities or the deciding what I can put together when I didn't plan in advance and I only have an hour before we have to be somewhere. I may just be in a cooking slump but when someone asks "What can I eat" or "What's for dinner/breakfast," I cringe. I did learn recently that I can program my oven to turn on at a specified time and that has helped a little.
What is your go-to dinner?
A go-to dinner in our house is spoon tacos or taco salad. Everyone likes those and they are easy to make. They also jump for joy when we have orange chicken from Costco (from the freezer section) with rice. Another favorite is Swedish meatballs (because it cooks in the crock pot and everyone likes it)
1 lb ground beef
1 pkg jimmy dean sausage (original)
1 sm onion diced
Mix together and form meatballs
Mix the following in crock pot....
2 cans Cream of Mushroom soup
1 can (the empty Cream of Mushroom can) of milk
1 envelope of Lipton onion soup
Add meatballs and cook on low all day (probably 8ish hours)
serve over rice or mashed potatoes
Oh and kabobs over couscous. Just marinate chicken with a McCormick marinade (in the envelope section, like taco seasoning) and thread it on a skewer with cut up veggies, such as zucchini, red peppers and onions. Grill the meat and make the couscous as directed on the package. So yummy and the kids like it. I think they get a kick out of the couscous because it's a little different.
What inspires you?
My husband inspires me by all the hard work he does to support us. He has an amazing work ethic and I'm grateful for his example to our kids.
Do you have any cleaning/organizational/motherhood tips?
Hahaha, I don’t think I'm the one to ask for cleaning tips. I can be a little crazy organized but lately it's hard to keep up with the kids, because they are always in everything and organization doesn't seem to last. But I do like to keep my pantry in sections like in the grocery store, ie pasta section, Mexican section, fruit and veggie section etc. I know it's a little crazy but it makes me happy. :)
